This was my first time ever making one when it wasn't in a box, and I know it might have been easier/cheaper to do the box but I really like the idea of knowing all the ingredients that go into what I make.
I was a little intimidated with the task, so did an easy no bake recipe I adapted from here,
but I did make a number of adjustments and it was DELICIOUS! I'm pretty sure I could have eaten the whole thing in two or less sittings .
Though it was simple I wanted it to look 'extra fancy' so I found a springform pan at Goodwill. You'd be amazed how many they have there, nice ones for cheap.
Here's my adjusted recipe and how I did it.
Simple No Bake Healthy (ish) Strawberry Cheesecake
Original Recipe Yield 1 - 8 or 10 inch round cheese cake

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/3 cup butter, melted
- 2 (8 ounce) packages low fat cream cheese
- 2 teaspoons lemon juice
- 16oz container fat free whipped cream
- 1/4 cup white sugar
- fresh/frozen strawberries
Directions
- In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. Add melted butter and mix well. Press into the bottom of an 8 or 10 inch springform pan. Chill until firm.
- In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick. Add the sugar and continue to beat until stiff. Pour into chilled crust, and top with berries (I had just brought them to a quick boil) Chill several hours or overnight. Just before serving, remove the sides of the springform pan.
Ooh, yum! That springform pan certainly did its job well (and you did too) - it looks amazing!
ReplyDeleteIs the texture like a traditional baked cheesecake? I had no idea that "normal" cheesecake was baked until I was 18 -- my grandma always made her cheesecake and it is light and fluffy and not at all baked. It took me some time to like the baked stuff, but now I love cheesecake in all its forms :)
