Crustless Quiche, Chocolate Peanut Butter Pie, and Other Recipes for Pi Day

Tomorrow is 3/14, Pi Day. You know Pi, the mathematical equation for getting the circumference of a circle or 3.14. Anyway, my husband and I are just nerdy enough to celebrate it. That, or I just like reasons to celebrate.

You might wonder how to celebrate Pi Day, well you do it by eating pies. Pretty simple. There are so many good recipes for pies of all kind, both savory and sweet. I thought I would share a couple of my favorites with you.

My mom used to make quiche without the crust and the first time I had it at a restaurant it came in a pie crust. I tried it but decided I liked it better my mom's way, and it's easier to make without the crust.

The recipe I have will make two 9 inch pie pans or one 9 x 11 dish. You can half it if you only want one. 

First you fill your pan 1/3 - 1/2 full of grated cheese.

Then you add whatever other fillings you want, I usually do meat first and then veggies if I am adding any. This time I used pieces of ham lunch meat and spinach. Bacon, sausage, and ham are common meat choices and spinach and broccoli are probably the most popular veggies to add.

In a blender blend eggs, flour, and milk. Pour mixture into pan.

Bake it in a 350 degree oven for 30-40 minutes depending on the size. You can know it's done when it has risen a little and when you shake it the middle seems firm.

Crustless Quiche
- Cheddar Cheese, grated
- 6 eggs
- 2 Tbls of flour
- 1 1/2 Cup milk
- Fillings: Whatever you like of bacon, sausage, ham, broccoli spinach. Ext.

Preheat oven to 350 degrees. Fill 9 x 13 pan (or two 9 inch pie pans) one third of the way with cheese. Add fillings of choice. In blender mix eggs, flour, and milk. Pour into pan. Bake for 30-40 minutes.

Of course pies for dinner, lunch, or breakfast are fine but we all know that dessert pies are where it's at. To me fruit pies are all right but chocolate or peanut butter or cheesecake, those are my favorite. A couple thanksgivings ago a friend and I decided to use all of those to make the perfect pie. The cheesecake isn't a traditional cheesecake, it's a no-bake recipe that we added peanut butter to. It makes a superb chocolate peanut butter pie though. Also, I'm not sure why my pictures turned out a little blue colored, it's frustrating. 

Pretty basic ingredients, pie crust, milk, pudding mix, cream cheese, sugar, whipped cream, peanut butter. Also you don't need two whipped cream containers like my picture shows, I was doubling it to make two pies.

First you mix up the peanut butter layer. Mix the cream cheese, sugar, and peanut butter. I don't usually measure my peanut butter exactly, I just scoop large spoonfuls from the jar and then after I mix the peanut butter filling up I taste to see if it needs more. Today I used two big scoops and later I decided I wanted a little more. 

Add the whipped topping and put in your pie crust. Do not fill it all the way because there needs to be room for the chocolate layer. about 2/3 of the way is probably right. Don't worry if you have filling left over. It's great as a fruit dip.

Mix the pudding with the milk according to the pie filling directions on the pudding box. For mine it was 1 3/4 cup milk whisked with the mix. Pour that on top of the peanut butter layer and refrigerate for it to set. I would suggest a couple of hours at least.

Chocolate Peanut Butter Pie
- Graham Cracker or cookie crust
- 4 oz. cream cheese
- 1/2 cup sugar
- 3/4 to 1 cup creamy peanut butter
- 2 cups cool whip
- 1 box chocolate pudding mix
- 1 3/4 cup milk

With mixer mix cream cheese and sugar until blended, add peanut butter depending on how much peanut butter flavor you want. Then with a soon mix in the cool whip. Pour peanut butter mixture into pie crust, filling the crust about 2/3 of the way. You may have some mixture left over.

Whisk pudding mix into milk, and pour on top of peanut butter mixture. Depending on the size of your pie crust you may have a little pudding left over as well.

Refrigerate to set, usually 2-4 hours.
